1. Ghughni:- Ghughni is one of the most famous dishes in India. When you travel Bihar you will found two variant of Ghughni: one is steam fried gram with chopped onions and tomatoes and the second variant is prepared from gram fried with mustard oil, chopped onions, and tomatoes. Ghughni is consumed in almost every home in the evening as a snack with tea.
2. Khaja:- Khaja is a sweet dish from Bihar made with all-purpose flour(Maida) with sugar. It has many thin crispy layers of flour dipped in sugar syrup. At the wedding in Bihar, this is the main dish which is gifted as sweets. There is a place in Bihar called "Shilaav" which is famous for this Khaja. Here you will find the different taste of Khaja means the salty version of Khaja along with traditional sweet one.
3. Tilkut:- Tilkut is also sweet in taste and this is made from white Til(Sesam Seeds) along with soft sugar balls pounded with the hammer. Tilkut is available only for a few months in the winter season. It is consumed with curd, chiura or have it separately. At the time of Makar Sankranti festival Tilkut is the main attraction. There is a place in Bihar named Gaya where you will get Tilkut whole year and also get the different variant of Tilkut like plane Tilkut, Khoya Tilkut etc.
4. Thekua:- Thekua is also sweet in taste made from wheat flour along with sugar, deep fried in ghee or vegetable oil. Thekua is used to eat as a snack in evening at every house of Bihar and also send as a sweets gift to relatives. Thekua has an important place as prasad (holy food) at Chhath festival in Bihar. So if you are in Bihar at the time of Chhath festival then don't forget to have Thekua.
5. Pedukiya:- Pedukiya is a sweet dish and especially used to make in the festival of Teej in Bihar. Pedukiya is prepared by all-purpose flour(Maida) filled with the mixture of dry fruits, suji(semolina) and khova deep fried in ghee or vegetable oil. Its crispy and soft outside stuffed sweet.
6. Malpua:- During the festival of Holi every kitchen of Bihar must cook Malpua. Malpua is made from all-purpose flour, banana, milk, sugar and dry fruits fried in ghee or vegetable oil and dipped in sugar syrup. Malpua is the most traditional dish of Bihar cooked in every Bihari's kitchen. In recent times, When the guest has arrived then Malpua is a featured dish at lunch or dinner.
